Aloo Paratha Recipe in Mast Indian Recipes


Aloo paratha recipe with step by step photos. Aloo paratha is  the most famous one among Indian paratha recipes. Aloo paratha is a whole flat bread  stuffed spicy and tangu potato mixture. parathas are cooked with butter and served with raita, chole, pickle etc. Aloo paratha is a healthy wholesome breakfast for toddlers and kids. Here I am sharing a very rustic and spicy aloo paratha recipe dhaba style.


Dhaba style aloo paratha is a popular version of aloo paratha. Dhaba food is usually very rustic and filling.  Dal palak, dal fry, paneer paratha are popular dhaba style recipes. I am posting this easy aloo paratha recipe on reader’s request. Dhaba style parathas are more thick, buttery and crispy. The filling is also somewhat spicy and tangy. In some places they even shallow fry the paratha. This way aloo parathas turn out very crispy.

Aloo paratha needs very simple ingredients - boiled potatoes, minced ginger and green chili, fine chopped red onion, spices, salt, and chopped fresh cilantro leaves. To bring out the flavor of mashed boiled potatoes, it is important to add generous amount of red onion, cilantro, spices, even ginger and green chili! Do this, and your family will forget store-bought paratha.  

So, let's learn how to make potato paratha which I went extra-mile to finally make right!

I boil potatoes and grate them for even stuffing. I learned if I just mash the potatoes with hand or fork, that leaves lumps in paratha which does not look good and does not even taste that good. So, no chunky potatoes in my aloo paratha.

For making stuffing, I add 1/2 large red onion (fine chopped for even mixing), fine minced green chili, ginger, and cilantro to grated potatoes. I add generous amount of spices and make sure taste after missing to adjust salt. You would not want under-seasoned potatoes for aloo paratha.

I also add little bit of salt in potato paratha dough. This makes the paratha more evenly seasoned than a no-salt dough with salty filling. It is important to let the dough rest for 5-10 minutes after kneading. In this time, dough relaxes. Relaxed dough gives very good moist texture to paratha.  

Both, dough and potato stuffing can be made a day ahead and refrigerated in air-tight container. For cooking, I stuff each a piece of dough with small tennis ball size stuffing and, then roll it gently on a flour dusted board. Often, I sear paratha with little bit of oil applied on both sides. This prevents paratha from drying out. If I' not in mood to use oil for frying paratha... I just sear the paratha without oil and serve it with little spoonful of butter.

Ingredients

For paratha:

  • 1 cup whole wheat flour
  • ¾ cup water
  • 1 teaspoon oil
  • Salt
For stuffing:

  • 2 large potatoes
  • 2 green chillies+1/2 inch ginger crushed together
  • ½ teaspoon cumin powder
  • ½ teaspoon garam masala powder
  • ¼ teaspoon chaat masala powder
  • ¼ teaspoon amchur
  • 1 teaspoon lemon juice
  • Salt
  • 3 tablespoons butter, fro frying paratha
Instructions:
  • Pressure cook or boil 2 large potatoes. Take wheat flour in a mixing bowl. Add salt and oil. Mix well.
  • Make a well in the center and add ¾ cup water.
  • Mix well slowly and knead to a smooth dough. The dough should be soft, supple and non sticky.
  • Set the dough aside for 10-15 minutes.

  • Take the boiled potatoes and peel off the skin. Mash the potatoes very well. Add all the other ingredients for stuffed.
  • Mix well and make the stuffing.
  • Heat a heavy cast iron tava. Divide the dough into 4-5 equal portions. Divide the filling too.
  • Take a dough ball and roll into a small circle. Keep one portion of prepared stuffing and close from all the sides. Seal in the center and press slightly.
  • Roll into thick circle of about 6 inches.
  • Place in the hot tava and cook very well from both sides. Use butter for frying.
  • Serve aloo paratha piping hot.
Notes:
  • These parathas take a while to cook, be sure to use a thick tava.
  • Cook the edges well by pressing them well.
